Not as many as when fresh.<\/p>\n<p>\tWhen you dehydrate, let&#39;s say, whole peas (at low temperature) then later you soak them, then you set them out to sprout &#8212; guess what? &#8212; they will sprout, so that means that they still contain enzymes. But with a cracker where everything is all blended together, the enzymes might be reduced in this form, see.<\/p>\n<p>\tAs to how much to eat of dehydrated foods &#8212; optimally you should only eat a minimum amount. What is minimum to me? &#8211; a few small crackers or dehydrated cookies per day &#8212; 2, 3, or 4 &#8212; but also there could be many days when you just don&#39;t feel like eating dehydrated foods.
