I am reading Hooked on Raw & loving it. I am taking notes & distributing them to interested friends. Right now I am taking notes on your chapter about enzymes. I was thinking about sending these notes to a friend of mine who has about nine COOKbooks out on vegan cooking; she not only advocates that cooked food is okay for you — she tells her audience that some foods MUST be cooked in order to yield their nutrients. She quotes Joel Fuhrman, M.D. as saying that the enzymes in raw foods are not utilizable by humans.
I know she is wrong. That's why I want to interest her in what you have written (I realize there are lots of people talking about enzymes, including those who research it). Anyway, she is a real stickler for research, so I have to be careful.
I came across your marvelous quote by Dr. William Campbell Douglass (p.10) & looked for the source. He's not in your bibliography either. So I went on the Internet & found this! (page attached below)
I myself have quoted Douglass about vaccinations. I thought I loved everything about this guy, but how does one explain this position? If his scientific reasoning & ability to sift through data enables him to arrive here, why should I trust anything he says?
And I question your use of him — especially when you leave him out of your bibliography.
As I said at the beginning here, I am thoroughly enjoying your wonderful book & find your explanation of things done in an easily-understood way. Perhaps Douglass is unexplainable — or perhaps a meat addict in such denial he will go to any lengths to rationalize his defense of meat.

Even people that believe very differently from me on a lot of issues, can still get it right sometimes and I do believe Dr. Douglass got it right with that quote of his.* He is not listed in my bibliography precisely because much of what he advocates I do not believe in and in the bibliography I was trying to direct people to some of the books that helped guide me to my philosophy, beliefs, decisions and choices.
I think that it's commendable that you are trying to enlighten your vegan friend, and the best way to do that (for her particular mindset) is with the research as you have concluded. There is a book available on my website called Food for Humans by Patrick Wright that I believe has the research that you need. The writing style of the book is not perfect because the author's first language is not English, but it is still the best book that I know of for the research. Most of the research that he cites has been done in Europe. In the US, as you may or may not know, research into the raw food diet is not profitable because at the end of the research what is one going to sell? Just good wholesome food? Unfortunately in today's scientific climate, scientists or researchers (and their sponsors that provide the money for research) want to have something to sell in the end, and that is the main reason that the research is seldom done. You could also look into the book, The China Study. and there's another book but I can't think of the name of it. I'll get that title to you later.
In my book, a section which you probably haven't come to yet, there are two examples of research that I find convincing and credible, and they were done at a time when the scientific community was much more honest than it is today. The Pottenger Cat Studies and Dr. Weston Price's travels studying the diets of indigenous peoples. Dr. Price's book, Nutrition and Physical Degeneration, is a wonderful resource because it provides many pictures of the results of eating highly processed foods, as well as before pictures of people on their traditional whole food diets.
Please be aware that no matter what scientific evidence you present to your friend, she may still reject it. After all, she has written 9 vegan cookbooks, and it's not easy to move on with new information that contradicts everything you have believed. But it's not impossible either. Matthew Kenney, a well-known chef with many cookbooks under his belt, adopted a raw food diet for himself and has since co-written a raw food recipe book and has opened 4 raw food restaurants and a raw food culinary institute in Dumbo, Brooklyn, NY.
To my way of thinking, we can still find information of value from Dr. William Campbell Douglass. It doesn't have to be an all or nothing approach. In other words, no matter what the biases of a particular author, there may still be much truth in what he says, such as his position on vaccinations, etc. I was receiving his newsletters for a time, and he had much good information in there.
Of course, I do not agree with Dr. Douglass' meat eating stance but also I do not judge people that are eating meat because when I look back, I remember that I started my life as a meat eater too. And letting go of meat is an enlightenment, education and process. Meat IS an addiction and as Viktoras Kulvinskas says, there may come a time when people go to twelve step programs to let go of the meat, it is so addictive. I look forward to that day.

Yes, I think many of us have finally concluded that meat eating is an addiction.
